Recipe: Tortilla Soup

I'm from Texas where tortilla soup could be considered a winter staple. Actually for a while was one of my Christmas Eve traditions - tortilla soup, quesadillas made to order and cool peppermint ice cream.

Don't get bogged down by the ingredient list - it's really not that much and it really requires little chopping. You can actually buy your onions, garlic, celery & carrots pre-chopped in the produce department if you are looking for a shortcut. I promise this is an easy soup to make.

Homemade Tortilla Soup

3 T Butter
1 Onion, chopped
4 Garlic Cloves, minced
6 Celery Ribs, diced
1 Jalapeño, seeded & chopped
2 Carrots, diced
1 lb Raw Chicken, diced
1/2 C Flour
1t Tabasco
14 oz Can Diced Tomatoes
1t Ground Cumin
1t Lemon Pepper
1t Chili Powder
1t Sale
42 oz Chicken Broth

Heat butter in a large pot and saute onion, jalapeno, garlic, carrots, celery and chicken.

Once chicken is cooked through add cumin, chili powder, salt lemon pepper, Tabasco and flour, stirring well. Then add chicken broth and diced tomatoes.

Simmer 1 hour. To serve I garnish with crushed tortilla chips, grated cheddar cheese, sour cream and diced avocados.
