Recipe : Roasted Chicken Corn Chowder Soup

I am a bit of a Foodie, I have to admit. I love nothing more than getting in the kitchen and cooking a great meal. That said, I'm all about easy (but tasty)  cooking especially when I have my 2 "assistants" around to help me out (by helping, of course, I mean fighting over whose turn it is to use the spoon). I 'm going to post a family friendly recipe each Friday. I hope you'll give them a try. Leave me a comment and let me know what you think!

Making meals is definitely a family event in my house, my kids help me make dinner every night. In this recipe Jack (5) helps cut the roasted chicken and measure the ingredients while Kate (2) dumps the ingredients in a pot. I do most of the cooking, they get most of the credit.

Roasted Chicken Corn Chowder

2T Butter
1/4 C Onion, chopped
1/4 C Celery, chopped
1 Jalapeño, seeded and minced
2T Flour
3 C Milk
2 C Roasted Chicken, chopped
1 1/2 C Corn Kernels, frozen or fresh
1 Can Cream Style Corn
1/4 t Dried Thyme
1/4 t Ground Red Pepper
1/8 t Salt

1. Melt the butter in a large dutch oven over medium heat. Add onion, celery and jalapeno. Cook for 3 minutes or until tender stirring frequently.

2. Add flour, cook 1 minute stirring constantly

3. Stir in milk and remaining ingredients - bring to a boil until thick.

Serve with grilled cheese sandwiches or cheese toast and salad for a complete meal!
