Recipe: Maytag Blue Cheese Potato Chips

When we visited John's grandfather, we found out that he had a 2 lb wheel of Maytag Blue Cheese.... to say that we gorged on blue cheese may be an understatement. We had blue cheese every. single. day. and it was Heaven. (might also explain the extra 5 lbs I'm carrying around, but seriously worth it)

I've been scrolling through pictures on my computer and came across a few from the trip, which immediately put me in a blue cheese mood…

Blue Cheese Potato Chips

1 C Heavy Cream
1T Flour
5 oz Blue Cheese, crumbled
1/2 oz Lemon Juice
2t Cracked Black Pepper
1 t Salt
8 oz Potato Chips, thick cut
Chives, snipped for garnish

In a heat resistant bowl, place warm potato chips in a 350 degree oven.

Meanwhile, in a medium saucepan, bring cream to a simmer, whisk in flour to thicken the sauce. Blend in cheese, whisking constantly. Season with lemon juice, salt and pepper. Remove the chips from the oven and add warm cream mixture. Toss gently until all the chips are coated evenly. Place in a serving dish and sprinkle with crumbled blue cheese and chives. Serve immediately (should definitely be served warm).
