Recipe: Lemon Bars

After a full week of birthday celebrations dedicated to all things chocolate, I knew my hubs was ready for a lemony dessert for our Memorial Day party. I found this recipe for Lemon Squares from Southern Living and even though it's all made from scratch it really was so very simple... the perfect dessert for a hot summer day.

Homemade Lemon Bars

2 1/4 C Flour, divided
1/2 C Powdered Sugar
1 C Cold Butter, cut into pieces
4 Large Eggs
2 C Granulated Sugar
1 tsp Lemon Zest
1/2 C Lemon Juice
1/2 tsp Baking Powder

Preheat over to 350 degrees. Line bottom and sides of a 13x9 pan with parchment paper or aluminum foil, allowing 2 - 3 inches to extend over the sides.

Stir together 2 cups flour and 1/2 cup powdered sugar. Cut in butter using a fork until crubly. Press mixture onto bottom of pan. Bake for 20 - 25 minutes or until lightly browned.

Meanwhile, whisk eggs in a large bowl until smooth; whisk in granulated sugar, lemon zest and juice. In a separate bowl, stir together baking powder and 1/4 flour then whisk into the egg mixture. Pour mixture over hot baked crust.

Bake for 25 minutes or until filling is set. Let cook in the pan on a wire rack for 30 minutes. Lift from pan, using foil or parchment paper as handles. Cool completely on a wire rack about 30 minutes.
Remove foil/paper and cut into bars; sprinkle with powder sugar.
