Recipe: BBQ Frito PieFriday, June 25, 2010
I'm a big fan of Frito pie... what southern girl isn't? A few years ago, my husband insisted that I had to try Sonny Bryan's BBQ Frito Pie. BBQ? in a Frito pie? But, I do trust my husband... and WOW was he right. Sooo ridiculously good. And easy to make... especially if you have leftover BBQ Pork, right?
Leftover BBQ (I used pork, but you can use whatever. my recipe here)
Bag of Fritos
1 can Pinto Beans
BBQ Sauce (I always use a honey BBQ sauce)
Cheddar Cheese, shredded
Toppings: Sour Cream, Jalapenos, Chopped Onions (all optional)
Drain and rinse the can of beans and place in a small saucepan. Add in enough BBQ sauce to cover the beans and allow them to heat all the way through. In the meantime, heat up the BBQ meat - either on the stove or microwave. While those are heating crack open that bag of Fritos (now TRUE frito pie should be served inside the Frito bag... but that's totally up to you).
Place the Fritos at the bottom of your bowl, then top with the meat and beans. Finish it up with some shredded cheddar and top with sour cream, jalapenos & onions.
Make sure you make enough so you can fill your bowl twice. it's that good.
