Foodie Friday: Mexican Shrimp CocktailFriday, April 09, 2010
To me, there's nothing better when the weather gets warm than sitting outside at a little dive seafood bar and eating oysters and mexican shrimp cocktail. I don't know... it's just my own version of paradise. I love it. But... since we're trying to put the 'shut down' on our eating out, I've resorted to making my own little slice of paradise in the backyard by making Mexican Cocktail myself.
I first got this recipe from John's aunt and have tweaked it some... it does have an unusual ingredient... see if you can spot it:
Mexican Shrimp Cocktail
1 lb Shrimp
3 Lg Tomatoes
1/2 Onion, chopped
1 C Sunkist Orange Soda (yep, here it is... kinda weird, huh?)
1/2 C Ketchup
Garlic Powder & Salt to taste
1/2 Bunch of Cilantro, chopped
Boil shrimp with peels on just until they turn pink - about 4 minutes or so. Peel and chop shrimp, reserve 1/4 C of shrimp water. Mix together all the ingredients, including the shrimp water. If you want to kick it up a notch toss in a little Tabasco.
Allow to chill in the fridge for at least 30 minutes to an hour. Serve in glasses.
