There's a restaurant near me called Cafe R&D...and let me start by saying thank God I didn't discover it while pregnant or else I'd have sent my husband there at least twice a week for the Dip Duo & Chicken Salad. As it is, non-prego as I am, I still crave these two dishes.
Jalapeno Cheese Dip3 oz Cream Cheese, room temperature
1.5 C Sharp Cheddar, grated
1 C Pepper Jack Cheese, grated
1/4 C Mayonaise
1/2 t Onion Powder
1/2 t Garlic Powder
3 T Jalapenos, finely chopped
Mix all ingredients together and allow to sit for at least an hour before serving. Could this be any easier? really.
My personal opinion on buying shredded cheese? It's okay from time to time, but for a recipe like this, where the cheese is the star of the dish, freshly grated gives the best flavor. Just use the grater attachment on your food processor... or better yet grate it by hand and give yourself a little workout that way you can skip going to the gym!
