Recipe: Orange Glazed Pecans

Friday, February 15, 2013

I love any kind of sweet pecan - I got this recipe from one of my friend's moms, who is a fabulous cook and makes them to have out at parties. I like to make a batch of these orange glazed pecans to have on hand to throw in salads, on top of ice cream, or even just to grab a handful as a snack. They're so versatile and easy to make, plus they last forever when stored in an airtight container. You could easily substitute any other nut for the pecans if you'd like... cashews would be really tasty. Orange Glazed Pecans 1 Egg White 1/2 t Salt 1/2 t Cinnamon 1 T Orange Juice 1/2 C Sugar 3 C Pecans Beat the egg white until foamy. Add salt, cinnamon and orange juice. Fold in sugar and mix well. Add pecans. Bake on a cookie sheet lined with parchment paper at 250 degrees for 45 - 60 minutes, turning pecans every 15 minutes. These are ridiculously good warm from the oven. If you find that you like these, it's a good idea to buy the big bag of pecans at Costco because they're half the price...
