Recipe: Parmesan Chicken Paillards

I know, it sounds fancy... doesn't it? No one really has to know that this meal is so easy it really only has 4 ingredients. This is my go to meal on nights when I don't know what to cook since I usually have all the ingredients on hand (thanks to Mr. Costco, who keeps my freezer stocked with antibiotic, hormone-free chicken).

You can have this meal prepped, cooked and to the table in less than 15 minutes. Really. I usually serve this with Wild Rice or Broccoli Rice (which is Jack's all time favorite side). My kids eat this every time without any complaints, although they do like to dip it in ranch (but do keep in mind these are the same children who willingly dip their green beans in ranch dressing, so take that with a grain of salt).

**Also, did you notice the new recipe design? At the request of a couple blog readers, I am going to start posting my recipes on recipe cards (4x6) so that you can print them out. Simply drag the image to your desktop or right click the image and save it. Then simply insert it into Word and you can print out the recipe easily.

  6. Made this last night. It was so easy and SO GOOD! Only problem is I packed the leftovers in the kids' lunches and don't have any left for myself today.
