Recipe: Egg Casserole

What Easter Sunday is complete without an egg casserole? This recipe I got from my friend Joanne several years ago and it's become my breakfast standby. I use this recipe any time we're planning a big breakfast: Christmas morning, Easter morning, whenever I can. 

Let me preface this recipe with the disclaimer that I hate sausage. Hate it, hate it. Won't eat it... unless it's in this casserole. Weird, I know, but it's so tasty in this dish. And the best part? It can be made the day before so you can sleep in a bit Sunday morning.

Egg Casserole

In a casserole pan layer:

10 Slices of Bread
8 oz Swiss Cheese
1 Pkg Sliced Mushrooms, sauted
1 Pkg Sausage, cooked
1 Onion, chopped

Mix, then pour over the layers:

10 Eggs
2 C Milk
1/2t Garlic Powder
1t Salt
1t Mustard (dry or prepared)
1t Poultry Seasoning
Pepper to taste

Bake at 350 for one hour

*You can make it ahead and bake it the next day, just make sure to refrigerated it overnight.
