Recipe: Pecan Pie Muffins

I've seen several posts this week featuring tea and muffins - and there really isn't a better breakfast in my opinion. These pecan pie muffins are so simple and yet fabulous. I like muffin recipes that are easy enough to mix together while you still have a little bit of sleep in your eyes. These do the trick.
 Pecan Pie Muffins
1 C Pecans, chopped 1 C Brown Sugar 1/2 C Flour 2 Eggs, beaten until frothy 1/2 C butter, melted
Mix dry ingredients in a bowl, making a well in the middle. Mix eggs and butter, add to dry ingredients. Mix only until combined - do not over mix!
Put in FOIL baking cups, sprayed with cooking spray.
Bake at 350 degrees for 25 - 30 minutes or until done.
