Recipe: Easy Banana Bread

I am a big fan of banana bread... what other food can you serve for breakfast AND as a dessert to your kids? Really. The problem with banana bread, though is that it tends to have a loooong list of ingredients. That's why I love this version from Real Simple's Fake It, Don't Make It recipes. I have tried some other RS recipes, but have definitely tasted the "fake it" part. But not with this bread... it's always a winner in my house (and always devoured within 2 days).

In this recipe, Jackbird does all the measuring and cracking of eggs while Katbird loves to mash the bananas. Ask them their favorite part of making this bread, and they'll tell you licking the bowl.

  Banana Bread
1 box yellow cake mix
1 package Instant Banana Cream Pudding
1/2 C water
1/2 C vegetable oil
2 ripe bananas, mashed
4 eggs
1 C chopped pecans (optional)

Mix all the ingredients well. Pour into 2 large or 4 small greased loaf pans. Bake at 350 degrees F for 40 to 45 minutes.
 I sometimes make these in a cupcake pan when I'm in charge of snack at school. As an added treat, I throw in some chocolate chips because chocolate makes everything better.

**The kids don't know it, but I secretly throw in some flaxseed meal for added Omega-3 and fiber.
